Hello everyone, I am back, after a long break. With the festivities around and school shut the family and I ventured out for small trips. I am back now and here’s a recipe for Double Chocolate Chunk Oat Cookies.
I first made these cookies out of desperation to finish off the little oats that had been lying in my fridge for months. At 10 in the night, I googled the recipe, modified it as per my convenience and set out to make a batch of cookies. Nabeel was up and he showed much excitement in preparing them. He actually mixed and shaped the cookies. After about an hour and a half, there we were, Nabeel and I munching some freshly baked cookies oozing of chocolate and flavour. We had found our own little quick recipe that was to ensure the cookie jars were never empty and so I picked up a huge pack of rolled oats, on my next trip to the grocery store.
I made these again today especially for my readers. Nabeel is away at school which gives me the freedom to mix, click, add, shoot, shape, bake, and post. A second batch will be made once the master chef is back from school and all ready to roll 🙂
What I best like about the cookies is you can bake them at varying lengths to get the texture you like. The first time I baked these for a short time which resulted in chewy cookies with a gooey center, today, however they were baked for long which produced hard, crunchy cookies. So, depending upon your mood and texture preference you can adjust the baking time.
Another great thing about the cookies is they are made of oats. While we all know oats porridge is the ideal way to consume oats, however, at times it may get boring due to its the blandness and slimy texture (this explains why the oats had been lying in my fridge for months). Nabeel may be a foodie but he has a fussy palate. Anything, bland, tasteless, lacking awesomeness is quickly rejected. So when these cookies were polished off by him in no time, I was a happy mother with the prefect “Nabeel pleasing” oats recipe 🙂
Besides, the cookies being butter free, loaded with chocolate and super easy to make are the reasons you should try them today.

Double Chocolate Chunk Oats Cookies (yes, you may drool)
Makes 9 big cookies
- Oats – 3/4 cup
- Powdered Sugar – 1/4 cup
- Egg – 1/2, beaten
- Flour – 1/2 cup
- Vegetable oil – 1/4 cup
- Dark Chocolate Chunks – 1/2 cup
- Baking Powder – 1/4 teaspoon
- Salt – 2 pinches
- Vanilla Essence – 1 teaspoon
- Good quality Cocoa Powder – 2 teaspoon (I used Hershey’s)
Step 1 – Mix the dry ingredients; oats, sugar, flour, baking powder, salt and cocoa powder in a huge mixing bowl.
